Meati Foods vs NotCo

Meati Foods was a Boulder, Colorado maker of whole-cut mycelium 'steaks' and cutlets that raised about $450 million; the operating company collapsed in 2025 after a lender swept its cash, and its assets were sold for roughly $4 million.

NotCo is a Chilean food-tech company that uses an AI platform called Giuseppe to formulate plant-based milk, burgers, mayo and other products, and licenses the same AI to large food makers including via a Kraft Heinz joint venture.
