Helaina's chosen market is high-value precisely because it is high-barrier: bioactive proteins destined for infant formula and health applications face the most stringent regulatory, safety, and clinical-validation requirements in all of food, and the timeline from a promising fermentation-made protein to approved use in early-life nutrition is measured in years and heavy spending. About $83M in total equity is modest for a company that must fund fermentation scale-up and a long regulatory and clinical road simultaneously; precision fermentation is capital-hungry, and the sector's funding climate has turned cold. "Work with Nestlé" is a valuable signal but not a signed, scaled offtake, and large partners routinely explore many ingredients that never reach commercial volume.
