Chipotle's Makeline has cycled between its Irvine test center and San Jose "for modification" after in-restaurant testing, exactly the slow, iterative dance that precedes many quiet cancellations. The Makeline handles only the assembly step for bowls and salads, a narrow slice of restaurant operations, and its value depends on chains rebuilding workflow around a machine that must prove reliable, cleanable, and maintainable across thousands of high-volume, messy locations. Hyphen (formerly Ono Food Co.) has already pivoted once — from a robotic food truck — and is a small company (11-50 employees) attempting hardware manufacturing at scale, a capital-intensive discipline where deployment costs and service burden compound with every unit shipped. Its biggest backers are also its biggest potential customers, which means its fortunes hinge on a tiny number of chains whose enthusiasm could cool, and who could just as easily fund a competitor or build in-house. Pilots at 350 meals/hour in a test kitchen are a long way from a profitable installed base across a restaurant chain.
