Mission Barns was founded in 2018 by Eitan Fischer and David Bowman, both formerly of Eat Just's cellular-agriculture program, and is headquartered in the San Francisco Bay Area. Rather than growing whole cuts of meat, the company focuses narrowly on cultivated animal fat, grown from a small number of pork cells, used as a low-inclusion ingredient to add flavor and texture to hybrid and plant-based products such as bacon and meatballs. In March 2025 Mission Barns received an FDA 'no questions' letter for its cultivated pork fat, followed by USDA authorization of its pilot plant and product label, making it the first company cleared by the USDA for a cultivated fat ingredient. The fat debuted in Q3 2025 in meatballs and bacon at the San Francisco restaurant group Fiorella and in meatballs at a Sprouts Farmers Market and Berkeley Bowl in the Bay Area. The company has raised over 60 million dollars to date.
Mission Barns holds the first USDA clearance for cultivated fat and pursues a capital-light, ingredient-only model, offering a different commercial path than whole-cut cultivated meat and a near-term route to retail shelves.
