Mission Barns grows real pork fat from a small number of pig cells in proprietary bioreactors, producing animal fat without raising or slaughtering pigs. Used as a low-inclusion ingredient, the cultivated fat adds the flavor, aroma and mouthfeel of pork to hybrid and plant-based products such as bacon and meatballs. In 2025 it became the first cultivated fat to clear US regulators, receiving an FDA 'no questions' letter in March followed by USDA authorization of its pilot plant and label. The fat first reached consumers in Q3 2025 through restaurant group Fiorella and at Sprouts Farmers Market and Berkeley Bowl in the Bay Area.
