Wildtype is a Cultivated Meat company founded in 2016 and based in San Francisco, United States. It has raised $123M in total funding, most recently a Series B in 2022.
Wildtype launches a Kickstarter to ship cultivated lox directly to consumers' homes, a first for cultivated meat DTC.
Wildtype grows sushi-grade coho salmon from fish cells, producing a saku-style fillet meant to be eaten raw in dishes like sashimi, nigiri and poke without catching or farming wild fish. In May 2025 the FDA issued a 'no questions' letter on the product, the first US clearance for cultivated seafood, allowing commercial sale. Wildtype produces the salmon at a converted brewery in San Francisco's Dogpatch district and launched it at the restaurant Robin in August 2025, then rolled it out to additional fine-dining venues across the US as it works to scale capacity.
