Wildtype was founded in 2016 in San Francisco by molecular biologist and cardiologist Aryé Elfenbein and former diplomat Justin Kolbeck, growing sushi-grade salmon directly from fish cells rather than catching or farming fish. In May 2025 the FDA issued a 'no questions' letter on Wildtype's cultivated coho salmon, the first time the agency cleared a cultivated seafood product for US sale. The company manufactures the salmon at a former brewery in San Francisco's Dogpatch neighborhood and debuted it on the menu at the San Francisco restaurant Robin in August 2025 before expanding to additional restaurants. Wildtype has raised more than 120 million dollars from investors including L Catterton, Temasek, Bezos Expeditions, Cargill, S2G Ventures and Leonardo DiCaprio.
Wildtype holds the first FDA clearance for any cultivated seafood product, making it the reference point for whether cell-cultured fish can move from fine dining to broader markets.
